Our Story

A dash of this a splash of that, is how I grew up, helping my mom in the kitchen. My mom didn’t want me to lose my Lao heritage and wanted to ensure I knew how to cook all the traditional Lao foods she was constantly cooking up for our family. At that time I didn’t care much to help nor did I realize how it would become my life’s passion. True to her wish, it has been my passion to continue cooking authentic Lao food, making sure I know the traditional ways of cooking so that part of my culture is not lost and it is something I can pass along to my kids.

Those who know me, know that they will never leave my house hungry or thirsty. I’m a person who is always cooking and taking care of everyone’s belly. It’s been ingrained in my DNA, to always take care of people; the way I show my love and care for my people is to cook for them, it is part of the Lao culture. It truly brings me so much joy to see people eating my cooking and seeing the look of satisfaction on their face with full bellies.

Portland Chili Company stemmed from my love of spice and bold flavors. Everything I eat has to have some sort of spice and kick to it, but it was always so hard to find a solid spicy chili oil that had the flavors and heat my palate was searching for. It was only natural for me to create my own.

What started as a fun hobby of creating care packages for friends and family during a global pandemic has turned into so much more. My creation was so well received with nudging, urging and support to jar my chili oil that I had no choice, but to oblige.

Here I am today sharing with you my love of robust flavorful chili oil that you’ll want to put on anything and everything you eat!

Happiness is a full belly!
